Watermelon & Halloumi Salad

So who would have thought Watermelon would 'A' work in a salad and 'B' with halloumi? This is definitely one of my favourite summer dishes.
Serves 2
Ingredients:
250g bulgar wheat
Half a watermelon cut into small cubes
Half a cucumber diced
2 limes - zest and juice
Drizzle of olive oil to taste
6 slices of grilled halloumi
Method:
Add the bulgar wheat to a heatproof bowl, cover with boiling water and leave to soak for 20-30 mins, until the water is absorbed and the grains are tender.
Once the Bulgar wheat is ready, chuck everything but the halloumi into a bowl and give it a good mix up.
Grill the halloumi a few mins in each side, til its golden brown, then add it to the bowl and serve!! It's great as a meal on its own or as side salad if your having a BBQ!! Enjoy! Xx
