Pear and Pecan Porridge



Baby, it's cold outside! This is the perfect winter warmer and good anytime of day, not just for breakfast!


Ingredients: 1 Pear, handful of pecans roughly chopped, cinnamon, honey, juice from half a lemon, porridge oats, coconut milk or milk of your choice. Butter


Method: preheat oven to 190 degrees C. Peel, halve and core the pear and place in an oven proof dish. Mix 3 tbsp of honey with the lemon juice and pour over the pears. Sprinkle cinnamon over each half adding two knobs of butter on each. Pop them in the oven and bake for 20 mins, until the pears are soft and slightly golden. NB: you'll need to keep basting the pears every five mins


Place your roughly chopped pecans on a baking tray and bake for 6 mins. Don't forget to give them a shake half way through. Prepare the porridge how you like it. Personally I'm a fan of coconut milk, I prefer the flavour and there's lots of health benefits too.


When pears are ready, place them on top of the porridge, sprinkle over the pecans and drizzle with the leftover juice and honey from the baking tray. Finally dust with cinnamon and tuck in!!
