Happy Pancake Day!


These little beauties are gluten free and super tasty!! RECIPE (serves 1)

2 large eggs

1 ripe banana

1 scoop of vanilla protein powder

1/2 tsp of cinnamon


Place all the above in a bowl and whisk until smooth. If the batter appears too thick add a small amount of water. Be careful though as if it’s too runny the pancakes won’t hold together.


On a medium heat, melt a teaspoon of coconut oil in a frying pan. Add a small amount of batter, about an ice cream scoop full to the pan.


Once the batter starts to bubble, give the pan shake, if the pancake slides freely, flip it over. After a few mins shake the pan and again if it slides freely it’s ready to serve.


Repeat until all the batter is used - you may need to add more oil in between each pancake.


Top the pancakes with whatever takes your fancy. I’ve used sliced banana, pecans and maple syrup.
